The Forged Olive meat knife has a long, narrow blade. This results in less resistance when cutting meat or fish, and also reduces meat sticking to the blade. It is ideal for carving. The Forged Olive knives are made of Japanese 440C steel with a Rockwell hardness of 58. All Forged knives are hand-forged, making each one unique.
